Crispy Garlic Herb Oven Roasted Potatoes

Description

Baby potatoes are tossed in a delicious garlic and herb oil and roasted in the oven until they’re crispy and golden! These make the perfect side dish to any dinner. They also taste great the next day as leftovers!


Ingredients

  • 1 1/2 pounds golden baby potatoes
  • 46 large garlic cloves, minced or grated
  • 1 1/2 teaspoons Italian seasoning
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup extra-virgin olive oil

Instructions

  1. Prep: Preheat the oven to 450°F. Grease a large baking sheet with cooking spray and set aside. Begin by washing the baby potatoes to remove any dirt. Cut each potato in half lengthwise and place in a large bowl.
  2. Oil: Mince the garlic and place in a separate small bowl. Add the Italian seasoning, onion powder, garlic powder, salt, pepper and olive oil to the same bowl. Mix together with a spoon to combine. Pour the oil over the top of the potatoes and mix to coat the potatoes on all sides with the oil.
  3. Roast: Place the potatoes on the baking sheet. Make sure that the cut side is facing down. This is the KEY to getting the potatoes to crisp up nicely! Bake them for 30-40 minutes or until they’ve reached the desired amount of crispiness. Enjoy!

Notes

It’s not necessary to soak these potatoes beforehand, although you can if you would like! Soaking them removes the starch from the potatoes which allows them to crisp up easier.

You can sub the golden baby potatoes for red baby potatoes or cubed sweet potatoes. Both roast nicely!

Add some parmesan cheese either before roasting or after to make parmesan garlic roasted potatoes.
