Description

There’s simply no better way to wake up in the morning than to this sweet and delicious easy French Toast Casserole! It packs a bold cinnamon flavor and a crunchy buttery streusel topping that’s hard to resist.


Ingredients

French Toast

  • 1 loaf bread, cut into 1 inch cubes
  • 1 tablespoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1/2 cup light brown sugar, packed
  • 2 cups whole milk
  • 6 large eggs

Cinnamon Streusel

  • 8 tablespoons cold butter, cut into 1/2 tablespoon sized pieces
  • 1 teaspoon ground cinnamon
  • 1/2 cup light brown sugar, packed
  • 1/2 cup all-purpose flour

  • Fresh fruit
  • Butter
  • Powdered sugar

Instructions

  1. Prep: Preheat the oven to 350°F. Grease a 9×13 baking dish with cooking spray and set aside.
  2. Whisk: In a large bowl, add the vanilla, cinnamon, brown sugar, milk and eggs. Whisk until well combined. Add the bread to the egg mixture and stir with a spoon until the bread is completely saturated.
  3. Crumble: Prepare the cinnamon streusel topping. In a bowl, combine the butter, cinnamon, brown sugar and flour. Using a pastry cutter or fork, cut the butter into the other ingredients until small pea sized pieces of butter are left. 
  4. Assemble: Pour the french toast mixture into the dish and spread in an even layer. Evenly sprinkle the top of the casserole with the cinnamon streusel topping.
  5. Bake: Place in the oven and bake for 35-40 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean. Let the casserole cool for 10 minutes, then cut into 8 equal pieces. Serve with additional toppings of choice.

Notes

Streusel #1: If you only have unsalted butter, add 1/4 teaspoon of salt.

Streusel #2: You can easily make the streusel in a food processor instead. Add all the ingredients to the bowl fitted with the multi-purpose blade attachment. Pulse about 8 times or until small pieces of butter remain.

Dairy Free Option: Sub the whole milk for dairy free milk of choice and sub the butter for dairy free butter.

Overnight Tip: You can also make this an overnight french toast casserole as well. Prepare as stated in the recipe card. Cover with plastic wrap and place in the fridge overnight. In the morning, remove the plastic wrap and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. If the top starts getting too brown before baked through, tent with aluminum foil.

Freezing Instructions: Prepare as stated in the recipe card. Cover tightly with two layers of plastic wrap followed by one layer of aluminum foil. Label and date. Freeze for up to three months. Thaw in the refrigerator overnight. Preheat the oven to 350°F. Remove the foil and plastic wrap. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. If the top starts getting too brown before baked through, tent with aluminum foil.
